Cibo: Italian Food by a Filipina

Going into a new country, most people will only eat at tried and tested restaurants. No wonder, franchise restos have flavored the world bland. When you’re in the Philippines and you have an insatiable craving for some Italian, don’t immediately look for Olive Garden. One, you won’t find it here. Two, there are so many fantastic Filipino owned Italian restaurants to sample.

Let’s take a peek at the chic casual dining place Cibo. It means food in Italian and it serves straight-up Italian food. The menu is extensive with dishes from every region of Italy. No doubt, you will be overwhelmed by the descriptions of the food. I always come here for their Crema Di Zucca- a summer squash soup with a dollop of sour cream and bacon bits. It’s got a sweet salty contradiction and a creamy texture that’s just right. They also have great starter breads with dips like the Pate di Fegato and Spinaci Zola. Top it off with any of their pastas and you’ve got a great meal for movie date or for a business meeting. This resto has grown quite a following that it’s now on its 10th branch.

Look for Cibo in the popular malls. You won’t miss it as it has a distinct industrial with splashes of bright green or orange. Don’t be fooled by the modern interiors, the food is anything but. Chef Margarita Fores has remained true to the comforting nature of Italian cuisine.
