This traditional and beloved sweet treat of Mardi Gras is in high demand, and as New Orleanians move, bakeries like Haydel's find themselves shipping it all over the country. Sweet, slightly flaky and reminiscent of twisted brioche, swirled with cinnamon, and not dusted but simply COATED with sugar in purple, yellow, and green, it's something you've just GOT to have while in town. Praline, strawberry, cream cheese, and other fillings can make their way into these cakes, too, and are growing each year in popularity.


Make sure you don't get a toothache, though! The high sugar content OR the plastic baby baked inside will have that same effect. The baby is the greater danger, though ... get it in your slice and the next cake's on you!
