After finishing a degree in Audio Engineering in Boston, Nichole returned home to California where she worked for Sony Music, BMG & Columbia Records. One too many Hollywood sightings later, she hopped on a plane to live out a lifelong dream of the “American in Europe” and never looked back. Even though an audio engineering degree didn’t get her far here, years of traveling and her wild curiosity has led to four years of professional tour guiding and travel consulting in Europe.

Nothing pleases me more than picking a restaurant based on the wine. You’d think it would be the other way around, but I couldn’t resist visiting a trattoria known for its wide selection of wine from Tuscany and Umbria. The Antinori family has been making wine for over six hundred years, since Giovanni di Piero Antinori became part of the Arte Fiorentina dei Vinattieri in 1385. Throughout its long history, spanning 26 generations, the family has always personally managed the business making innovative, sometimes courageous choices, always with unwavering respect for tradition and the land. Most ingredients for their restaurants come fresh from the Antinori farms, as does all the fine wine.
Although not your average trattoria, this would be a special treat or business lunch during your stay in Florence. Start your meal off with a sample of Tuscan appetiziers, and be sure to have a meat dish (famous for their arista in crosta). Don’t forget dessert and of course, wine. In places like this, its best to tell the waiter your preferences in wine, red or white, full or light, and let the menu build itself. Don’t be shy, ask for suggestions, personal recommendations. Wine people love to talk about wine and enjoy pairing food with their favorites. This is a prefect example that sometimes, wine really is the most important part of the meal.
