One of the great provincial restaurants in Paris, this spot near Beaubourg is a favorite for their inventive apéritifs and for aligot: a wintry dish made of garlic mashed potatoes with melted Tomme cheese… mixed in, and sometimes with saucisson thrown in as well. If you're not in the mood for stick-to-your-bones aligot, they have a wide range of other auvergnat dishes to tempt smaller appetites-- soupe aux choux, soupe de topinambour, and salade auvergne.
